3-year PhD position is available at Technical University of Denmark

A 3-year PhD position is available at the National Food Institute (DTU Food), Division of Industrial Food Research with start 1 September 2014 or as soon as possible thereafter.

• The position is under a collaborative project with the Danish Technological Institute, DMRI (Danish Meat Research Institute) and supported by Norma & Frode S. Jacobsen Fond. 
• The project “Identification and quantification of antimicrobial and antioxidant compounds formed during processing of nitrite cured cooked pork products” aims at identifying proteins and peptides with antimicrobial and antioxidative activities that are formed during the nitrite curing of cooked pork products. Further, to identify processing factors that are important in their formation in order to optimize the amount of active metabolites and minimize the addition of nitrite in cured pork products.

Responsibilities and tasks :

• Experience with or knowledge of one or more of the following areas will be an advantage: Protein purification, Protein and peptide analysis (LC/MS), oxidation/antioxidant, microbiological understanding as well as statistical analysis.
• Good laboratory skills
• Good collaboration and communication skills  (written and oral)
• Structured and analytical working approach

Salary and appointment terms : The salary and appointment terms are consistent with the current rules for PhD degree students. The period of employment is 3 years.
